About Chef Michael
Michael, ever passionate about food, has worked for many fine establishments, local icons, and the United States Government, before striking out on his own and establishing Latreille Catering and Michael's Fine Food & Spirits.
Executive Chef / Manager of well known, The White House Berries Inn for over three years, which was owned by the even more well-known entrepreneur Juanita Bass.
Director of Food Services for Eurest Dining Services, a member of The Compass Group. With this position he was in charge of daily food production, catering and management of Verizon Headquarters in Syracuse, NY and produced over 600 meals each day.
Michael accepted an interesting offer to host and cater at the historic Brightside lodge on Raquette Lake. Here, he oversaw the entire restoration and development of the lodge as well as developing a marketing campaign, web site, etc. to host public events, weddings and 3-day corporate trainings. As Executive Chef & General Manager he met many challenges especially due to the fact that the lodge has no road access and is boat-access only, meaning that everything, food, beverages, tents, etc. had to be brought across the lake on a boat.
Many are surprised to learn Michael has a military background... Michael served eight years in the United States Army as a Sergeant E-5 ...Civil Affairs battalion, studying Arabic and training to become a linguist. He entered a three-month tour of duty in Tunisia at an international language academy. While in Tunisia, Michael was keen to study not only the language and culture but also the various cuisine of the region.
Michael currently serves as the Chef / Proprietor of Michael's Fine Food & Spirits, and Latreille Catering.
Michael resides in Hamilton, NY with his wife Jenn, son and best buddy, Theo, daughter Poppy, and bulldog, Steve. Michael feels strongly about giving back to the community. He hosts the annual Michael’s Fine Food and Spirits Culinary Golf Tournament which raises money for a $1000 scholarship awarded to a Waterville senior who is going to a culinary school. Michael and his wife are also active in fundraising for Chenango Nursery School in Hamilton and Camp FIVER in Poolville. This fall, Michael will be working with Heritage Farms by employing some of their participants as well as hosting cooking classes on their campus. He has sat with students and board members at MVCC and SUNY Morrisville for their Senior Portfolio presentations. He enjoys hosting students at the restaurant for Career Days where students shadow Michael and learn about all aspects of the business. Michael was honored when he was asked to mentor four motivated students from Waterville in the Jr. Chef Competition, a cooking competition between high school students from three different counties. The team took the title and was awarded “Best Overall Recipe."
